I didn’t put together the title to entice you here under false pretences. This vegan mayonnaise really does come together in just 1 minute. All you’ve got to do is place all the ingredients into a container and use an immersion blender to blend them together. That’s all there is to it.
Because this vegan mayonnaise is so quick and easy, you’ve no excuses not to make it — even at the last minute. Several times I’ve been serving dinner, only to open up the refrigerator and see that there’s no vegan mayonnaise left. (Really — this stuff is so good it will disappear faster than you can ever imagine. Best make a double batch to be safe!)
No worries. Since this vegan mayo takes just 60 seconds to whip up, I can have it on the table before anyone even realizes and so can you.

How long will this last?
When you store it inside an air-tight jar or container, this vegan mayo will last about 5 days in the refrigerator. If you’re not a big mayonnaise eater, you can simply halve or even quarter the ingredients in this recipe and make a smaller batch.
If you find the mayonnaise has separated when you remove it from the refrigerator, simply give it a stir and everything will blend back together perfectly.

1-Minute Vegan Mayonnaise Recipe
Ingredients
- 1 cup sunflower oil
- 1/2 cup soy milk
- 1 tbsp yellow mustard
- 1 tbsp lemon juice
- 1 tbsp agave nectar
- 1/2 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Combine all the ingredients in the blender cup, place the immersion blender in, and pulse until the mayo emulsifies. Season with salt and pepper to taste. Add more mustard/ lemon juice/ agave if needed.
