If you’ve just started following a plant-based diet, you might think that you’ll never get to eat mayonnaise ever again. But that simply isn’t true. Although plant-based mayonnaise isn’t something you’ll easily find in your local grocery store, you can follow this recipe and whip up your very own vegan mayonnaise in just 60 seconds.

Just like real mayonnaise

This vegan mayo really does taste just as good (if not better!) than ordinary mayonnaise. The oil and plant-based milk provide the smooth, subtle foundation, while the mustard adds a hint of flavor depth, the lemon juice and vinegar add a bright zestiness and the agave nectar brings it all together with the perfect touch of sweetness.

And don’t even get me started on the texture! This vegan mayonnaise is so wonderfully smooth, deliciously creamy, incredibly rich and lusciously thick that you’ll swear it’s made with dairy products, but it’s entirely vegan. The unbeatable texture comes from the magic that happens when you blend sunflower oil and soy milk together.

While you can make this vegan mayo with any type of oil and plant-based milk, I definitely recommend sunflower oil and soy milk to get the thickest, creamiest results. Once you’ve tried this homemade vegan mayonnaise, you’ll never want to go back to ordinary mayo. Even if you’re not following a strictly plant-based diet!

Ready in 60 seconds

I didn’t put together the title to entice you here under false pretences. This vegan mayonnaise really does come together in just 1 minute. All you’ve got to do is place all the ingredients into a container and use an immersion blender to blend them together. That’s all there is to it.

Because this vegan mayonnaise is so quick and easy, you’ve no excuses not to make it — even at the last minute. Several times I’ve been serving dinner, only to open up the refrigerator and see that there’s no vegan mayonnaise left. (Really — this stuff is so good it will disappear faster than you can ever imagine. Best make a double batch to be safe!)

No worries. Since this vegan mayo takes just 60 seconds to whip up, I can have it on the table before anyone even realizes and so can you.

How long will this last?

When you store it inside an air-tight jar or container, this vegan mayo will last about 5 days in the refrigerator. If you’re not a big mayonnaise eater, you can simply halve or even quarter the ingredients in this recipe and make a smaller batch.

If you find the mayonnaise has separated when you remove it from the refrigerator, simply give it a stir and everything will blend back together perfectly.

What to serve with this 1-minute vegan mayonnaise

It’s almost easier to answer the question, “What can’t you serve with this 1-minute vegan mayonnaise”! Seriously — this stuff goes great with everything. You can spread it on sandwiches, use it as a dressing for salads or even as a dip for your favorite bite-sized treats. It goes amazingly with these air fryer sweet potato fries and air fryer parmesan shrimp.

Ingredients

  • 1 cup sunflower oil
  • 1/2 cup soy milk
  • 1 tbsp yellow mustard
  • 1 tbsp lemon juice
  • 1 tbsp agave nectar
  • 1/2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  • Combine all the ingredients in the blender cup, place the immersion blender in, and pulse until the mayo emulsifies. Season with salt and pepper to taste. Add more mustard/ lemon juice/ agave if needed.
