Blackened Cauliflower Steak with Roasted Chickpeas and Chimichurri Sauce
- 1 medium cauliflower
- 1 tbsp vegetable oil
- 2 tsp maple syrup
- 1 tbsp lemon juice
- 1 tbsp paprika
- 1/2 tbsp garlic powder
- 1/4 tbsp onion powder
- 1 tbsp dry thyme leaves
- 1 tsp oregano
- 1/8 tsp cayenne pepper
- 1/8 tsp mustard powder
- 1 tsp ground black pepper
- 1 tsp salt
- 1 cup cilantro leaves
- 1 cup parsley leaves
- 3 garlic cloves
- 1 tbsp vegetable oil
- 1/2 lime juiced
- 1 tsp oregano
- 1 tsp apple vinegar
- roasted crispy chickpeas
- Preheat the oven to 210C/425F and cut the cauliflower into thick steaks. Set to one side.
- In a small bowl, stir together the vegetable oil, maple syrup, lemon juice and all spices. This will be the spice mix for the cauliflower steaks.
- Place the cauliflower steaks onto a lined baking tray. Brush each side of the steaks with the spice mix and bake in the oven for 20-25 minutes.
- Place all the chimichurri sauce ingredients into a food processor and blend until smooth.
- When cooked, serve the cauliflower steaks with hummus, chimichurri sauce and roasted crispy chickpeas.
