Dairy-Free Roasted Parmesan Cauliflower
- 1 large cauliflower cut into bite-size florets (about 10 cups)
- 2 tbsp avocado oil
- 1 tsp garlic powder
- 1/2 cup dairy free parmesan
- 2 tbsp fresh parsley chopped
- salt and pepper to taste
- Preheat the oven to 230C/450F. In a large bowl, toss the cauliflower with avocado oil until it’s well coated.
- Sprinkle over the garlic powder, salt and pepper. Mix well to make sure the flavorings are evenly dispersed.
- Transfer the cauliflower to a lined baking sheet. Scatter over 1/4 cup dairy-free parmesan cheese and roast for 20 minutes until golden and tender.
- Sprinkle with the parsley and remaining parmesan before serving.
