Is almond flour the same as ground almonds?
This recipe uses almond flour, not ground almonds. Although they’re similar, almond flour and ground almonds are not the same thing. Almond flour is made from blanched almonds which have had their skins removed and ground up super finely. Ground almonds (also sometimes called almond meal) still contain the skins and are coarser than almond flour.

Because of this, I definitely recommend using almond flour to make these cookies. This simple, easy-to-get ingredient is one of the tricks to making these almond cookies so soft and addictive without using regular flour.

Gluten-free Soft Almond Cookies
Ingredients
- 100 g almond flour
- 30 g rice flour
- 4 tbsp almond milk
- 4 tbsp coconut sugar
- 3 tbsp avocado oil
- 1 tsp baking soda
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 pinch salt
Instructions
- Line a baking sheet with parchment paper and preheat the oven to 180C/350F.
- In a medium-sized bowl, combine the almond flour, rice flour, coconut sugar, salt and baking soda. Mix well.
- Pour in the avocado oil, almond milk and lemon juice. Stir with a spatula until fully combined.
- Roll the cookie dough into 10 evenly sized balls. Space each ball out on the baking sheet so they won’t touch when they spread while baking.
- Bake the cookies at 180C/350F for 10-13 minutes until golden brown. Leave to cool completely before enjoying.
