There’s nothing quite like homemade almond cookies, don’t you think? Especially cookies that are unbelievably easy to make, take just 20 minutes and are totally vegan so everyone can enjoy a bite.

One of the best things about these almond cookies is that they don’t contain the ingredients some people are allergic to that you usually get in cookies. You won’t find any gluten, dairy or eggs in the ingredients list down below.
If you know someone who is allergic to these common ingredients, whip them up a batch of these cookies and watch the smile grow on their face! Or share this recipe with them so they can make their own batch of allergy-friendly cookies whenever a craving strikes.
Is almond flour the same as ground almonds?
This recipe uses almond flour, not ground almonds. Although they’re similar, almond flour and ground almonds are not the same thing. Almond flour is made from blanched almonds which have had their skins removed and ground up super finely. Ground almonds (also sometimes called almond meal) still contain the skins and are coarser than almond flour.
Because of this, I definitely recommend using almond flour to make these cookies. This simple, easy-to-get ingredient is one of the tricks to making these almond cookies so soft and addictive without using regular flour.
This gluten-free soft almond cookie recipe is perfect if you’re new to gluten-free baking. One of the problems many people come across when they first start baking without gluten is getting the texture right. You can’t just take a recipe and substitute gluten-free flour for all-purpose flour. The texture won’t be right and the flavor likely won’t be enjoyable, either.
But these cookies use the perfect ratio of gluten-free ingredients so you get the most incredible super soft texture. When you bite into one of these cookies, the thin, delicate outer layer reveals a wonderfully light and fluffy inside.
If you’ve ever tried gluten-free baked goods, you’ll really struggle to believe these cookies are truly gluten-free. They’re that good!
Perfect for beginners
