Each serving of this delicious grilled corn salsa contains 5 vegetables:
- Corn.
- Onion.
- Tomato,
- Jalapeño.
- Avocado.
There’s no actual avocado in the recipe. But you brush the cobs with avocado oil before cooking on the grill, so it still counts! One of my favorite things about this salsa is that it’s the perfect way to get people to eat healthily without them realizing it. When you try to give kids salad for dinner, they’ll often complain about eating a healthy dish. But give them a bowl of this grilled corn salsa along with some tortilla chips for a snack and they’ll think they’re getting a junk food treat when they’re really not.

Alternative cooking method

But if you don’t have a grill or don’t want the hassle of firing yours up, you can make this homemade corn salsa another way.


Follow step 1 and 2, but instead of placing the corn cobs on the grill, place them onto a griddle dish or pan pre-heated to a medium heat. Follow the same steps of turning the corn over repeatedly and waiting until the kernels have started to blacken before turning off the heat, removing the cobs from the pan and using them to make the salsa.


What to serve with this grilled corn salsa

Grilled Corn Salsa
Ingredients
- 4 corn on the cob
- 1/4 cup red onion diced
- 2 plum tomatoes chopped
- 1 jalapeno pepper diced
- 1 lime juiced
- 1/3 cup cilantro chopped
- 1 tbsp avocado oil or other vegetable oil
- 1/4 tsp cumin
- salt and pepper to taste
Instructions
- Shuck the corn cobs to get rid of the leaves.
- Brush the kernels with avocado oil and season with salt and pepper.
- Place the corn cobs on the grill. Turn often and cook for about 10 minutes, until they’re charred all over.
- Cut the individual corn kernels off the cob and place them into a large bowl.
- Add the red onion, tomato, pepper, lime, cilantro and cumin into the bowl with the corn and mix everything together.
- Taste and add more seasoning, if desired, before serving with tortilla chips.
