Delicious carrot cakes with a cinnamon flavor

It is very important to squeeze the juice from the grated carrots.

Citrus zest always gives a wonderful aroma to the cakes.
Thanks to a large number of different spices, the cupcakes are very spicy. I really like the combination of carrots and walnuts, they are an ideal pair.

Heat the oven to 180°C/350℉, line 2 cupcake tins with paper liners.

In a big bowl, beat eggs with sugar and butter. Add all spices, baking soda, and powder, zest, salt, mix until combined. Add flour in a batches.

Stir in carrot and nuts carefully and divide between cupcake forms.

Bake for 20-25 minutes and cool completely.

For the frosting: Beat cream cheese with powdered sugar and vanilla until fluffy, about 3-4 minutes. Chill 1 hour.

Using a piping bag decorate all cupcakes with cream and sprinkle with chopped walnuts.

1/4 cup heavy cream
1 tbsp chopped walnuts
