Mini Pumpkin Pie Cookie Cups

I congratulate you with Autumn here! Great season. Everything around becomes picturesque and romantic. I like autumn. And I love it for delicious recipes. I love eating pumpkins and pumpkin pies, pears, apples. Of course, I decided to make a pumpkin pie. But I wanted to change something and make a recipe more interesting for you.

Meet! The mini pumpkin pie in a cookie cup. This recipe includes a pumpkin, and this is the most important thing!
I can’t say this recipe is difficult. Rather, it is easy. The recipe is for 6 servings. You can eat it with your friends or family, also you can eat all yourself! I always do so. I’m just kidding … maybe!

Mini Pumpkin Pie Cookie Cups

The recipe is divided into two parts. The main processes for Chocolate Cookie Cups and Pumpkin Filling.
For the Chocolate Cookie Cups, I need flour, cocoa powder, baking soda, salt, butter, sugar, brown sugar, egg and vanilla extract.
For Pumpkin Filling: vanilla pudding, milk, condensed milk, pumpkin puree and pumpkin pie spice.
In a medium bowl, mix, flour, cocoa powders, baking soda, and salt.
In another bowl, add butter, sugars, after beat on med-high until light and fluffy.

Add in eggs and vanilla. Beat until combined. Combine with flour and mix until just combined. Divide dough between 6 muffin cups. You can make more or less mini pumpkin pies. Use Adjust Servings in the column ingredients. Our calculator will automatically divide all ingredients into the required quantity.

Then take something you can use to press the dough in a muffin tin and make the cup shape. I used a small jar.
Bake for 10-13 minutes 350°F/180°C, then remove from oven and using a small jar to press down the center to create a well. Cups were raised after baking, so I had to press again. Set aside the baked cups, let them cool down and rest. You can go to Pumpkin Filling.

Fill cookie cups with the pumpkin cream.  I added a lot of pumpkin filling, I love it so much. Top with whipped cream and sprinkle with cinnamon. Also, you can sprinkle with nuts. Will also be very tasty.
