Today I want to share a very interesting piece of French confectionery art! Delicious Pear and Almond Tart BOURDALOUE! I’m sure this recipe will attract your attention!

My husband and I create a video for each recipe. Pear and Almond Tart BOURDALOUE isn’t an easy recipe, but it’s not difficult either! You will be interested in the cooking processes of this classic French dessert.

For Pears:

Pour 1 liter of water into a saucepan. Add 3 tbsp lemon juice and vanilla. Put on the fire and bring to a boil, meanwhile, take care of the pears. By the way, the best pear choice will be hard and ripe Williams pears. It is very important during the cooking they don’t turn into a puree. Take the pears, peel them and cut in half, remove the cores. Place the pears in a hot water and cover the pot with a lid. I recommend you cook on low heat. Cook for about 15-20 minutes. And now we are going to the dough!

For the Dough:

We have to make a short dough. Take a medium-sized bowl. Add sugar powder and almond flour. Add salt and mix well until combined. Then add the butter and whisk with mixer until smooth. Do you feel an aroma? This recipe has a lot of flavors, each process has a unique aroma. It should be with French recipes!

Stir the egg yolk until smooth. Gradually, add flour. Then, make a ball from the dough and wrap it in a plastic foil. Chill it in the refrigerator for three hours! I would gladly chill it for 5 minutes to eat it faster. But, unfortunately, we have to wait.

After three hours of chilling the dough in the fridge, let’s roll it!  Sprinkle the dough with flour and roll it on the floured work surface. The thickness should be approximately 3-5 mm.

Tip

If the dough cracks or breaks, close the holes with small pieces of the same dough.

Clean the excess flour with a dry brush. Wrap half the dough on the rolling pin and transfer it to the baking tart form. Work neatly, with tenderness. It is very important that the dough doesn’t break and crack. Using your fingers, press it to the bottom. Take the fork and pierce the base of the tart in many places. Then freeze the base for 10 minutes

Preheat oven to 375°F/190°C and after freezing the dough, put it to the oven. Bake for 10 minutes.

Let’s go to the almond filling!

Recipe Pear and Almond Tart BOURDALOUE

 

For the Almond Filling:

Mix all the ingredients for the Almond cream. Almond flour, flour, sugar powder, butter and a large egg. Mix until completely smooth. Don’t use an electric mixer, mix cream with a rubber spatula or hand whisk.

Mouthwatering warm salad with mushrooms and chicken – this recipe can be very interesting for you.

Add the almond cream to the baked and cooled tart. Evenly spread the cream. Add the prepared pears (Cut the pears thinly along). Bake for 30 minutes at 350°F/180°C.

Almost everything is ready! Finally, we need to cover the almost ready pear tart with glaze. In France, they create an additional caramel coating, but I decided to use honey. Preheat the honey in the microwave for about 20-25 seconds, until it’s runny. Cover the tart with warm honey using a silicone brush, form a thin coating. Our Pear and Almond Tart is ready! I recommend you to cool the dessert and eat it!!
