I want to share with you easy, fast and delicious recipe Pumpkin Cinnamon Cheesecake Truffles.

I love this recipe for its simplicity and brightness of taste. It has available to all ingredients when I cook these truffles I maximally enjoy the process. Somewhere in my head explodes because of the combination of flavors pumpkin, pumpkin spice, vanilla biscuits. It really makes me crazy and I can’t wait to eat these pumpkin balls.

 

Pumpkin cinnamon cheesecake truffles

In Autumn, as soon as supermarkets start selling pumpkins my husband and I buy it at once because pumpkin can be the basis of a lot of interesting recipes like these truffles, like cakes, salads, appetizers, drinks and main dishes.

We always cook this recipe together so we get it twice as fast. I make pumpkin mixture and roll truffle balls and my husband dip them in the chocolate. And we can’t wait until the chocolate is set! (of course, we eat a couple of them before chocolate is set…)

This recipe is so light, it will be a nice ending to your dinner. Also it really great for breakfast with a cup of coffee with cinnamon. I LOVE CINNAMON! SO MUCH!!!

I recommend you watching my video of this recipe so you won’t miss any step. Follow all steps and don’t change them because you will break pumpkin magic and don’t forget to season it with a pinch of LOVE.

Some Suggestions for Pumpkin cinnamon cheesecake truffles

Also, you can use milk or dark chocolate instead of white but white chocolate brings out special taste to these candies.

Make sure that all ingredients are in the room temperature, your cream cheese will be more fluffy when you beat it.

Always I make pumpkin puree myself, if you use homemade pumpkin puree too don’t forget to cool it.

Beat the cream cheese and sugar using electric mixer together until creamy about 2 minutes.

Add the pumpkin puree and beat until combined.

Add the biscuit crumbs, pumpkin pie spice, and cinnamon. Beat for 2 minutes until everything is combined. The mixture is supposed to be soft and thick.

Begin rolling pumpkin mixture into balls (about 1 tsp per ball) and place the balls on the baking sheets with parchment paper.

Microwave white chocolate until completely melted and smooth for 1 minute.

Dip balls in the chocolate using a fork.

Top truffles with a sprinkle of vanilla biscuit crumbs or cinnamon.
Allow chocolate to completely set in the refrigerator before serving and enjoy!
