Pumpkin spice latte donuts

 

  • 250g unsalted butter, room temperature
  • 250g sugar
  • 250g flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 cup brewed coffee, cold
  • 3 cups caster sugar
  • 1/2 tsp cinnamon
  1. Grease baking donut form with cooking spray.
  2. In a big bowl, beat together butter and sugar until light and fluffy about 5 minutes.
  3. Add vanilla, and eggs one per time, mix until completely combined. Mix in pumpkin spice and puree.
  4. Sift in baking soda and flour, beat until smooth and transfer the dough to the baking form.
  5. Bake at 180°C/350°F for 15-18 minutes. Let them cool.
  6. In a medium bowl, mix powdered sugar with cinnamon, add coffee gradually to reach a good consistency.
  7. Dip each donut in the coffee glaze and add some colored sprinkles.
