Sugar-Free Ginger Pineapple Lemonade
- 1/2 cup agave nectar
- 4 oz ginger peeled and sliced
- 2 cups pineapple juice
- 2 lemons zested
- 1 1/2 cups lemon juice freshly squeezed
- 6 cups water divided
- In a small saucepan, warm 1 cup water, agave nectar, lemon zest (keep the rest of the lemons for later) and ginger over a medium heat.
- Increase the heat to high, bring to a boil and cook for 3-4 minutes.
- Leave to cool to room temperature before straining into a sealable container. Pop the lid onto the container and place into the refrigerator to chill.
- When you’re ready to serve, combine the pineapple juice, lemon juice, 1/2 the ginger syrup you made earlier, remaining 5 cups water and lemon slices into a large pitcher.
- Pour into glasses with ice cubes and add more ginger syrup to taste before serving.
