  • 1/2 cup agave nectar
  • 4 oz ginger peeled and sliced
  • 2 cups pineapple juice
  • 2 lemons zested
  • 1 1/2 cups lemon juice freshly squeezed
  • 6 cups water divided


  • In a small saucepan, warm 1 cup water, agave nectar, lemon zest (keep the rest of the lemons for later) and ginger over a medium heat.
  • Increase the heat to high, bring to a boil and cook for 3-4 minutes.
  • Leave to cool to room temperature before straining into a sealable container. Pop the lid onto the container and place into the refrigerator to chill.
  • When you’re ready to serve, combine the pineapple juice, lemon juice, 1/2 the ginger syrup you made earlier, remaining 5 cups water and lemon slices into a large pitcher.
  • Pour into glasses with ice cubes and add more ginger syrup to taste before serving.
