Easy Coconut Chia Pudding
Pudding for breakfast? Absolutely!
- 6 tbsp chia seeds
- 1 can coconut milk (14oz)
- 2 tbsp maple syrup or other sweetener
- 1/4 cup mango puree
- 1/4 cup kiwi puree
- 1/4 cup strawberry puree
- 1 tsp cinnamon
Stir together the chia seeds, coconut milk and sweetener of your choice in a small jar or sealable container.
Place the lid on top of the jar or container and leave the pudding to thicken and chill in the refrigerator for at least 30 minutes. You can also leave the pudding in the refrigerator overnight.
Before serving, top the pudding with fruit puree, extra fresh fruit and cinnamon.
