Grilled Corn Salsa
The ideal summer side dish, this homemade salsa is packed full of colorful veggies, taste bud-tingling flavors and incredibly moreish textures.

- 4 corn on the cob
- 1/4 cup red onion diced
- 2 plum tomatoes chopped
- 1 jalapeno pepper diced
- 1 lime juiced
- 1/3 cup cilantro chopped
- 1 tbsp avocado oil or other vegetable oil
- 1/4 tsp cumin
- salt and pepper to taste
Shuck the corn cobs to get rid of the leaves.
Brush the kernels with avocado oil and season with salt and pepper.
Place the corn cobs on the grill. Turn often and cook for about 10 minutes, until they’re charred all over.
Cut the individual corn kernels off the cob and place them into a large bowl.
Add the red onion, tomato, pepper, lime, cilantro and cumin into the bowl with the corn and mix everything together.
Taste and add more seasoning, if desired, before serving with tortilla chips.
