Grilled Corn Salsa

  • 4 corn on the cob
  • 1/4 cup red onion diced
  • 2 plum tomatoes chopped
  • 1 jalapeno pepper diced
  • 1 lime juiced
  • 1/3 cup cilantro chopped
  • 1 tbsp avocado oil or other vegetable oil
  • 1/4 tsp cumin
  • salt and pepper to taste


  • Shuck the corn cobs to get rid of the leaves.
  • Brush the kernels with avocado oil and season with salt and pepper.
  • Place the corn cobs on the grill. Turn often and cook for about 10 minutes, until they’re charred all over.
  • Cut the individual corn kernels off the cob and place them into a large bowl.
  • Add the red onion, tomato, pepper, lime, cilantro and cumin into the bowl with the corn and mix everything together.
  • Taste and add more seasoning, if desired, before serving with tortilla chips.
